The Holy Land Experience Christmas Party Cake
Wow! This sucker was huge! I had so much fun making this cake, but it was such a challenge to get it done. Between decorating and covering this cake in fondant, and helping my husband manage a moving sale we were having that morning, I got it done.
I bought an 18" round cake pan and it didn't even fit in my oven (I used a towel to cover the oven and keep the heat in while it baked), and it didn't fit in my fridge once I put one layer of fondant on it! I ended up putting the cake in a box in the garage - thank you God, it was freezing cold outside (47 degrees fahrenheit) that day and I could do that.
The cake was four different flavors (biggest to smallest): vanilla pound cake with vanilla icing and red and green morsels for filling; red velvet with cream cheese icing and filling; gluten free dark chocolate cake with andes mint mousse filling and vanilla icing; and carrot cake with cream cheese icing and filling. The cake was a huge success! Miss Jan loved it! It was all covered in fondant, then cookie cut outs of large angels that were painted gold with edible gold luster dust, and small christmas trees that were painted silver with edible silver luster dust. And to top it off, I used what is known as "disco dust" (edible glitter) around all of the angles so that they would sparkle.
Each cake sat on top of an acrylic stand and inside the tube of each stand were miniature gold ornaments. Around the bottom of each cake were flying angel ornaments. And finally, on the largest cake I tied a huge bow with gold ribbon.
Kudos, definitely go out to my husband who did most of the heavy lifting once we got to Loew's Portofino Bay Hotel and helped me set up the cake. He used to be a wedding DJ in California so he knows how to do load ins and set ups at events and whatnot, so it was awesome having him there.
Once the cake was all set up, we both got dressed in our Christmas Party outfits and joined the party once it started. It was interesting getting dressed in the hotel bathroom, but so goes right? As long as the cake looked good, I was happy.
And it did look good! It looked better than good! I am absolutely proud of this cake, all of that hard work and look at what I did! Isn't it amazing? Not bad for someone who has never taken a cake class her whole life, huh?
