The Holy Land Experience Christmas Party Cake

Wow! This sucker was huge!  I had so much fun making this cake, but it was such a challenge to get it done. Between decorating and covering this cake in fondant, and helping my husband manage a moving sale we were having that morning, I got it done. I bought an 18" round cake pan and it didn't even fit in my oven (I used a towel to cover the oven and keep the heat in while it baked), and it didn't fit in my fridge once I put one layer of fondant on it! I ended up putting the cake in a box in the garage - thank you God, it was freezing cold outside (47 degrees fahrenheit) that day and I could do that. The cake was four different flavors (biggest to smallest): vanilla pound cake with vanilla icing and red and green morsels for filling; red velvet with cream cheese icing and filling; gluten free dark chocolate cake with andes mint mousse filling and vanilla icing; and carrot cake with cream cheese icing and filling.  The cake was a huge success!
